As a food lover, I have to say that Guizhou cuisine is one of my favorites. The unique flavors and ingredients used in Guizhou dishes make them stand out from other Chinese cuisines.
One of the most famous Guizhou dishes is Sour Soup Fish (酸汤鱼). The fish is cooked in a sour and spicy broth made from pickled vegetables, chili peppers, and other
seasonings. It's a perfect combination of sour, spicy, and savory flavors.
Another popular dish is the Spicy Chicken (辣子鸡). The chicken is first marinated in a mixture of ginger, garlic, and spices, then fried until crispy. It's then tossed with dried chili peppers and Sichuan peppercorns, giving it a fiery and numbing sensation in the mouth.
Apart from these two dishes, Guizhou cuisine also has a variety of other delicious dishes, such as the Beef Rice Noodles (牛肉米粉), the Stir-fried Rice Cakes (炒年糕), and the Spicy Tofu (麻辣豆腐).
